Clean Eating Scone Recipe – Simply Pure Delight!

As you all know by now, I really like coffee. More common knowledge – I cherish girl-time. Annnd one last pretty obvious fact – I lovvve good food. Not only good food – the best is clean eating yummy food! Am I picky? Kinda.

So when I was asked to come up with a recipe using the International Delight Simply Pure creamer, I said Heck Yeah! International Delight Simply Pure creamer is made with real milk, cream and sugar making this request simply… a no-brainer. Simply Pure includes only 5 simple ingredients! Nice.

Off I was, to my local Walmart to nab this heavenly nectar. To my pleasant surprise, they had a whole booth set up with samples, as if they knew I were coming! This kind lady served me a miniature cup of joe sweetened by my soon to be favorite creamer. Once we were done chatting about all the positive reactions she was fielding from other customers, she walked me to the fridge where it was being sold. Now came the hard part, I had to decide. Which flavor would it be? Vanilla, Caramel or Hazelnut. As a tried and true vanilla lover, I was swayed to go in that direction this time… plus I imagined it working perfectly in my new scone recipe I was formulating!

Once all the ingredients were purchased, I couldn’t wait to get home and try my new recipe!

NEW Simply Pure creamer

Clean Eating Cinnamon Peach Scones

1 1/2 cups whole wheat flour

1 tsp ground cinnamon

1 1/2 tsp baking powder

1/2 tsp Himalayan pink salt

2 Tbsp unsalted butter – straight from the fridge, don’t melt

3 Tbsp pure maple syrup

1/2 cup plain nonfat Greek yogurt

1 1/2 tsp almond extract

3 Tbsp New International Delight Simply Pure Vanilla creamer 

1/2 cup fresh diced peaches (I may have snuck-in a little extra b/c YUM!)

Instructions:

Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.

Mix together flour, cinnamon, baking powder and salt in a medium bowl. Cut in butter with a fork til the mixture blends together and starts looking like fine crumbs. 

Make a well in the center of the crumb mixture. Stir in maple syrup, yogurt, almond extract and ONLY 2 Tbsp of the Simply Pure creamer. 

Fold in the delicious peaches! 

Form the dough into a ball and flatten into a circle on the baking sheet. Shaping and forming it into a pie almost 1″ high. Brush the remaining 1 Tbsp Simply Pure creamer on top of the pie.  Using a sharp knife, cut the pie into 8 triangles.

Bake at 425 degrees F for 20 mins, or until the tops are golden brown. Cool on the pan before removing them.

Makes: 8 good sized scones. These scones are soft and tender compared to the regular break-your-teeth variety.

Now, my favorite. Time to sit down with my coffee {with Simply Pure Vanilla creamer, please!}, fresh peach scones and my girls! So many of my loves in one little kitchen. It brings an Ahhhh to each and every morning as I begin refreshed and renewed; ready to attack the day!
