The other day, I was about to change into my workout clothes, and then I thought, “Ooh – I know what sounds even better…. baking!”
I mean, it IS peach and plum season, and I can’t let that go by without utilizing those ingredients in a baked dish (or two or six).
Here’s the thing though – I’m sort of an impatient baker. Really, I’m not much of a baker at all (I typically leave that to my daughters because they love it), and I prefer to cook. So when I do get that itch to whip something up, it’s got to be easy and quick.
That’s what I loved about this recipe, which I created by googling several other recipes, then mashing them all in one, and throwing together the ingredients based on what I had on hand in my pantry. It was so easy to make! The results were delicious, so I’m sharing them here with you.
Side note – I used gluten free ingredients in this recipe, but you don’t have to. Just use the flour of your choosing, and regular rolled oats in you don’t have allergy issues in your family.
1/2 cup coconut oil
1/2 cup all purpose flour (I used this GF flour)
1 cup rolled oats (I used these GF oats)
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon cloves
Pre-heat the oven to 350 degrees. While pre-heating, melt the coconut oil in the bottom of an 11×13 pan. Once melted, pour into a mixing bowl, leaving just enough to coat the bottom of the pan. Line the pan with peaches and plums, roughly sliced (remember, this is supposed to be easy – don’t worry about making it pretty, just pile them in). In the bowl, add the rest of the ingredients to your coconut oil and mix thoroughly with a spatula. Top the fruit with oat and flour mix, coating evenly. Cook for 30 minutes, or until lightly browned. Enjoy!
