Though most of what I share here is focused on fashion, beauty, home decor, and DIY, what you might not know about me is that I love to cook.
Interestingly enough, my most pinned post is another recipe (you can check that one out here).
With all three of my kids celebrating birthdays in the same week, I do a lot of partying in early March – and a good party always calls for a good dip.
I thought I’d share a couple I’ve made this week – both were delicious and pretty easy. If you’re looking for a last minute Friday night appetizer, then these might be the ones for you.
First up, a super quick and simple feta and tomato dip.
3 tomatoes, diced and seeded
4 green onions, thinly sliced
8 ounces crumbled feta cheese
Greek seasoning to taste (I used Cavender’s)
approx 1/4 cup olive oil
Mix tomatoes, green onions, and feta. Add Greek seasoning to taste. Stir, and drizzle olive oil over the mixture, folding gently. Serve with crackers (we like it with garlic and olive oil flavored Pasta Chips).
Next on the list is my take on a French Onion Dip.
1 Tablespoon olive oil
1 medium onion, thinly sliced
1 garlic clove, minced
salt and pepper to taste
1 cup plain Greek yogurt
4 oz. goat cheese
Heat oil over medium-high heat and add onions, garlic, salt and pepper. Cook until onions caramelize. In a separate bowl, mix together yogurt and goat cheese. Stir in the onions and garlic. Allow to cool, then enjoy! We like to pair this dip with alfredo flavored Pasta Chips.
Our thanks to the people at Vintage Italia Pasta Chips for providing us with a few flavors to try with these recipes!
