Pina Colada Revamped

One of my favorite summertime treats is a pina colada.

I may have indulged in a few while on our recent trip to Florida, in fact.

But one of my LEAST favorite things about them is the huge amount of calories.

So as soon as I returned from Florida I decided to see if I could revamp the drink – give it the nummy flavor I loved without the extra calories I hated.

This one, my friends, is pretty darn tasty. So much so that you better watch out – they go down fast! Make it with or without rum – it’s delicious either way.

healthy pina coladaStart with mangos in your blender – about a cup of frozen organic ones. Then add about 2 cups of frozen pineapples on top. Pour approximately 2 cups of unsweetened coconut milk in.pina colada without the extra caloriesNext, squeeze a fresh lime over your mixture. Last, pour in coconut/chia kefir (about 1/2 cup). Optional – add a healthy handful of spinach. The spinach won’t change the flavor, but it WILL significantly change the color!
