I know, I know – it’s just salsa. You can find a great recipe pretty much everywhere, all over the web. They’re all pretty much the same, right?
But I’m tellin’ ya… this one is truly the best. Every time I make it for friends they ask me for the recipe. So in the interest of helping them out (because I’m just that nice 😉 ), I thought I’d share it here. And you are going to be so glad I did. It’s delish.
It’s fresh, it’s delicious, and it’s pretty darn easy to make. And it tastes great with more than just chips. We spoon it over just about everything, from eggs to chicken and more (one delicious option – pair it with this).
The recipe here is for a big ol’ batch of it (because we go through it so quickly), but you can easily halve it if you don’t want quite as much. Or just do like we do and mow through it like crazy. Yum!

1 medium red onion
2 cloves garlic
approx 3 tablespoons cilantro
salt and pepper to taste
One at a time, pulse each ingredient in a food processor, transferring to a large bowl after you get the consistency you like (my kids like it a little runnier). Mix, add salt and pepper, and enjoy!
